AD | Food: Refried Bean and Halloumi Tacos with HelloFresh

If you’ve been following me over on Instagram, we’ve been trying to eat fresher and healthier this year. We’ve been trying to source fresh produce and eat as well as possible, plus doing lots of excercise and I feel so much better for it, as well as losing nearly a stone already! As shopping isn’t always easy during lockdown, one of the ways we’ve been getting meal inspiration and our ingredients sent to our doorstep is HelloFresh.

HelloFresh are a recipe box delivery service where you are sent ingredients to make fresh, delicious meals every week. You can customise your box for how many people in the house and also any dietary requirements, for example we are vegetarian. All the ingredients come measured and ready to go in your recipe, so the only thing left to do is cook. You can even chose an easy cook option if you are short of time! It couldn’t easier and the thing I love is having constant recipe inspiration. We are often stuck in a rut with meal planning so this takes that stress right off my shoulders! They also have an amazing selection of recipes on their website too!

This week, our favourite meal in the box was the Refried Bean and Halloumi Tacos, so I thought I’d share the recipe!

YOU WILL NEED

  • 1 pack Black Beans
  • 1 Garlic Clove
  • ½ unit Lime
  • 250 grams Halloumi
  • 1 sachet Tomato Puree
  • 1 sachet Chipotle Paste
  • 2 sachets Mayonnaise
  • 6 Small Flour Tortillas
  • Baby Gem Lettuce
  • 100ml water

RECIPE

Step One: Preheat your oven to 180℃. First of all we drained and rinsed the black beans in a colander. We then put a third of the beans in a bowl and mashed with a fork until broken up. For the garlic, we peeled and grated it and zested half a lime. We prepared the halloumi by chopping it into 2cm chunks.

Step Two: Heat a drizzle of oil in a medium saucepan over medium-high heat. We added in the garlic and tomato purée, stirred and cooked for 1 minute. Next we added in 100ml of tap water plus the whole and crushed beans. Mix together and cook for 3-4 mins.

Step Three: Next we added half the chipotle paste to the black beans. We mixed well and added seasoning to taste with salt and pepper. We popped this into the pan and allowed to simmer until thickened for 2-3 mins.

Step Four: We heated a drizzle of oil in a large frying pan on medium-high heat. My favourite part was adding the halloumi which we fried until golden (6-7 mins) – it smelled SO GOOD! The best way to stop them burning is to turn every 2 mins. Meanwhile, we mixed the remaining chipotle paste and half the mayo in a small bowl.

Step Five: To put the dish together we popped the tacos (3 per person) directly onto the top shelf of the oven until heated through (1-2 mins) For the sauce, we mixed the remaining mayo with the lime zest. To serve, trim the root from the baby gem lettuce then half lengthways. Thinly slice widthways.

Step Six: Next is the fun part as we put it all together! We laid the tacos on a board or plate and spread the chipotle mayo on the base of the tacos. Next up, we added a handful of lettuce to the base and squeezed over the lime juice. The finishing touches are a couple of spoonfuls of the chipotle bean mix to each taco. Top with equal amounts of halloumi cubes, drizzle over the limey mayo. Serve 3 per person with any extra lime wedges for squeezing over.

The dish is so fresh, flavour full and delicious! I’ve really missed eating Mexican food in restaurants during lockdown, so this was the closest we’ve come to the real thing in ages, I can’t believe we cooked such a tasty dish at home and so quickly!
